A Few Recipes

I have had several readers ask me to post some recipes. Trent and I do the cooking together and a lot of what we do is trial and error. Therefore I don't know the exact measurements of some of the ingredients. As I stated before our meals are simple and do not involve lots of ingredients. Most of our dinners can be made in 20 minutes or less! Here are four of our favorites:

BBQ Salmon
Ingredients:
    1 Fillet of FRESH Salmon (not farmed raised)
    BBQ Sauce (whatever brand you prefer)
  
Recipe: Rub BBQ sauce all over the salmon fillet (even on the skin). You have the choice of grilling it or baking it in the oven. If you grill it get the heat up to 450-500 degrees. Then rub some olive oil on the grate so that the fish does not stick. Next place the salmon directly on the grill grate and leave it on from 6-9 minutes. The fish should be a light pink. The outside should be seared and the inside is still a little raw in order to keep the salmon flavor. If you choose to bake the salmon heat your oven up to 415-450 degrees. Place the salmon is a greased baking dish and place it in the oven for 10-15 minutes.  


Mongolian Beef
Ingredients:
    Steak (we can usually get 1 steak if it's a good size, it usually saves $) or Steak Chunks
    Noodles (we prefer the Asian noodles or you can use rice)
    Teriyaki Sauce or Stir Fry Sauce
    1 Egg
    Butter (Two 1/2 tablespoons)
    A Splash of Soy Sauce
   Vegetables (we use the veggies we received in the Co-Op: red pepper, onion, carrots, cucumber, mushrooms, squash, Bok Choy Cauliflower etc.)

Recipe: Cut up all of the veggies. Place the Noodles in boiling water. Salt and pepper the steak and place it on the grill at 450 degrees for approx. 2-4 minutes (the steak will still be rare which you will finish cooking on the stove with the veggies later). Place some coconut oil or olive oil in the wok or saute pan. Break the egg in the pan and let it cook lightly. Quickly add the veggies and 1/2 a tablespoon of butter. Stir them occasionally. Cut the beef into bite-sized chunks. Add the meat to the pan and let it finish cooking. Drain the noodles or rice and pour them into the pan. Add the second 1/2 tablespoon of butter. Stir in the stir fry sauce and soy sauce.

Ingredients:
    Spaghetti Squash
    1 Onion Chopped (cut in half)
    Feta Cheese
    2 Tablespoons Coconut Oil
    1 Garlic Clove
    Sliced Olives
    2 Tablespoons Fresh Basil
    1.5 Cups of Chopped Tomatoes 

Recipe: Preheat oven to 350 degrees F. Lightly grease a baking sheet. Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled. Meanwhile, heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes. Cook until the tomatoes are warm.

 Pizza
Ingredients:
    Dough (you can make or buy your own, we usually buy dough made from Sprouts)
    Veggies (we usually use: spinach, mushrooms, tomatoes)
    Basil (or any spices you might want)
    Meat (if you choose)
    Shredded Cheese
    Sauce (make or buy)

Recipe: Preheat your oven to 420. Roll your dough out (you might want to sprinkle flour to keep the dough from sticking). Place the dough on a greased cookie sheet (we usually make a rectangle pizza that fills the whole cookie sheet). Next put your sauce, cheese, veggies (and cooked meat if you wish) on the dough). Place the cookie sheet in the oven at 420 degrees. Allow the pizza to cook for 10 minutes! 

I hope that this post helps inspire you to be creative with your meals! They are not rocket science and we love them because they are delicious, healthy and can be made very quickly. I'll continue to post a few recipes throughout my future posts.
